Our butterflied lamb leg, marinated in olive oil that is infused with lemon, garlic and rosemary is a Provenance classic. Roasted or barbecued hot and fast then rested and sliced thin, this versatile cut pleases the whole family.

Cooking instructions:
Take the meat out of the fridge at least 30min before cooking to reach room temperature. Pre-heat the oven to 180’C no fan / 165’C fan:
Cooking time, depending on the weight of the roast:
1.5kg – 1 hr 15min
850g – 40 minutes
Rest time: from 20 minutes up to half of the cooking time.

For medium 65–70°C and for medium well done 70°C+
